I am Yoshida, president of Yamada Shusei Ltd., a professional apparel garment repair group in Nagaoka City, Niigata Prefecture.


At a Yoriito meeting, the topic of Nagaoka's food culture was once discussed. Nagaoka has both seafood and mountain food, and it is true that they are all delicious. But when asked to recommend a dish for the restaurant's menu, it is surprisingly difficult to say, "This is it! 


At that meeting, we concluded that Nagaoka has a food culture of fermentation and brewing.


 Nagaoka City has an abundance of seasonal produce, a thriving brewing industry, and local production for local consumption on a daily basis.


Among these, the most characteristic food culture is "fermentation and brewing. In fact, there are a variety of fermented and brewed foods such as miso, soy sauce, sake, sake lees, amazake, salted fish, and pickles.


These have been created over a long history as a way to savor seasonal foods longer and more deeply, and are therefore deeply rooted in the lives and culture of the people of Nagaoka City.


Settaya ," which promotes such town attractions, is also a model course and sightseeing plan for Nagaoka City.


The gourmet foods related to fermentation and brewing include "miso katsu-don (miso pork cutlet served on top of a bowl of rice)," "sake-kasu ice cream," "miso ramen," "ginger soy sauce ramen," "soy sauce okowa ," and "sake-kasu manju (a bun stuffed with sake lees).


We will continue to think about creating a menu that conveys the goodness of Nagaoka.
